THE DEMON BUTCHER IN CANTERBURY. T0 THE EDITOK OF THE LYTTELTON TIMES. Sir, —Why in the name of all that is just and reasonable does mutton cost 7d to 8d per lb, while fat wedders are sold readily at 4d? Is it not monstrous that householders should have to pay nearly cent, per cent, ou the cost of sheep merely for the butchers turning them into mutton P I believe that for every 50 lb sheep the butcher kills he chuckles over his clear profit of 16s. Surely it is quite time that the public should take some steps to protect themselves from such palpable injustice. Yours, &c., PRO BONO PUBLICO.
