Sauvogeon, a Spanish savant, has for several years past observed the phenomena occurring in a cap of coffee after being sugared, and lias arrived at the following conclusions, which lie considers perfectly trustworthy : When the sugar dissolves quietly in flie coffee without stirring, numberless little bubbles of air rise to the surface of the liquid. Sauvogeon has regularly compared these phenomena with the indications of tbo barometer and thermometer, and did not publish Ids observations until ho hail satisfied himself that they were quite correct.
