Regulations for the grading o± milk at creameries, skimming stations, and full-cream factories are published in a recent issue of the Gazette. It is provided that milk supplied to full-cream cheese factories shall be graded into two classes, and the first grade shall be such as would, by approved methods, without pasteruisation, make cheese of first grade. Three grades are required in creameries and skimming stations. The first, for butter is to grade as finest quality; the second for first grade butter, and the third class for milk which would, in the opinion of the milk grader, made butter below first grade. Proprietors of factories and creameries are required by the regulations to send • returns to the. Department of Agriculture showing the quantity of milk graded, and the number of pounds of milk or butter-fat contained in each grade. Why do men libe withher? ■ every meal.
