Tomato and Egg Paste. small saucepan greased with butter put a skinned tomato, pepper, and salt. When cooked and a beaten egg and stir till thickened. Larger quantities in proportion. Pickled Gherkins.—Put the gherkins into a large stone jar, and cover them with brine strong enough to carry an egg. Place the cover on the jar, and leave it for two or three days, until the gherkins begin to turn yellow; then drain them and pour boiling vinegar over them. Put bay-leaves on the top, keep the jar in a warm place, and heat the vinegar afresh every day till the gherkins turn as green as required. Boil fresh vinegar, and with it one large blade of mace, 2oz. of whole pepper, four bay-leaves, and half a dozen small onions to each quart. Put the gherkins into widemouthed bottles, pour the vinegar over them, first allowing it to cool a little, or it will crack the bottles, and cork securely when cold. Time, from a week to a fortnight. Windfall Jam.—Windfalls, or apples too small to be used for other purposes, can be made into delicious jam or cheese. Slice up the apples, place them in a pan, and almost cover with water. Bring them slowly to the boil, and cook to a pulp.. Press through a sieve, add %lb. of loaf sugar to each lib. of pulp, and boil together for about 40 minutes, or until stiff enough to set. Put into small jam jars and tie down quite airtight. Quick Cakes.—lf you have an unexpected guest for tea, and there is no time to make cakes, here is a recipe which needs no cooking: Quarter of a pound of ground almonds, %lb. castor sugar, 2oz. thin biscuits grated, whites of two eggs whisked to a stiff froth.

Celery Sauce. —Six heads celery, one cupful sugar, 2oz. mustard seed, one teaspoonful tumeric, four large onions, two quarts vinegar, %lb. mustard, three tablespoonfuls salt. Blend tumeric and mustard with a little vinegar. Mix all ingredients and simmer slowly two hours. Bottle while hot.
