Where economy's concerned it's essential to do one's own marketing. The trouble of selecting such food as meat, fish, poultry, vegetables, and fruit is .well repaid. As the price of these things varies often from day to day, it's only by careful buying that one can take advantage of a sudden drop in prices due t»o a glut or lack of demand. Don't throw away the water in which meat, fowls or fish have been boiled. With the addition of bones, or scraps of meat or fish, you can have an excellent stock. When you want to use only half of a lemon, you can keep the other half from either drying or going mouldy for several days if you put it cut side down on a plate and cover with a tumbler. When cooking anything with chocolate avoid waste by always melting it over hot water. It burns or scorches very easily over a direct flame, no matter how low it is. Never throw away any left-over coffee. If you don't care for it reheated, you will find it makes a delicious coffee mould or pudding used with cornflour and milk.
