MEAT CONSUPTION
DOMINION'S HIGH FIGURE BUTTER USED LIBERALLY New Zealand is one of the heaviest meat-eating countries in the, Empire and it ranks high as a butter consumer, but- is comparatively sparing on cheese and whole milk. The consumption per head of beef in the Dominion is astonishinlglv high, being double that in Great Britain, which has a name for beef-eating. New Zealand and Australia arc considerably heavier meat-eating countries than either Canada or Great /Britain,. An interesting point is the predominance of pig meats in Canadian meat consumption and the low position occupied by mutton and lamb. While ! statistics of poultry consumption cannot be obtained for all four countries, data available in respect to Canada indicate that poultry occupies a much I more important place in the dietary of that country than is the case in New Zealnd. Pig meats have a very important place in the meat consumption of Great Britain and Canada a s con- | trusted with a comparatively minor position in both New Zealand and Australia. Raw . milk consumption is markedly higher in Canada than in either New Zealand or Great Britain, although butter consumption is rela- | tively high in New Zealand, j It i s quite apparent that the differ- ' enees for individual commodities represent in some instances differences in habits rather than a lower or higher J standard of consumption. Tt would seem that the consumption of dairy products and meats on tlie whole is considerably lower in Great Britain than in anv of the other three countries; buf that, while there are marked differences In respect of individual commodities in I the case of the other three countries, ' suebr differences are, generally speaking, of a compensatory nature.
