AT THE "DARDANELLES."

The sal© of cut flowers and produce at "The Dardanelles" on Saturday, in aid of the Christmas Gift Tobacco Fund; realised £10, which has been handed to the Mayor as treasurer of the fund. Contributions were received from Manafa, Mangatoki, Meremere, Whakamara, Manutahi. and Patea, and 10s.from Mr Westawa'y. We understand that for every shilling sent to Egypt Boz of tobacco and -50 cigarettes can be obtained. All gifts n>ust be sent in by the 4t-h October.

By request we reprint the following receipt for Christmas cake for soldiers: Directions.—2£lb flour, Hlb purrants, lib raisins, lib sultanas, £Ib lemon peel, *lb cooking almonds, lib butter, 10 eggs 1 email teaspoon soda, 2 small teaspoons cream of tartar.:

Cream the butter and sugar, add the well-beaten eggs, mix the soda andcream of. tartar with the flour, then gradually stir all the ingredients into the mixture. This makes two cakes. Bake for four hours. Have the oven rather hot at first to prevent the fruit \ sett Imp;, then a steady moderate heat to finish the baking. Cut down a 51b tin to five inches deeo. line with six thicknesses of brown paper and one of white, and bake your mixture in two or three tins. When baked, remove the papers, i~e the cakes thinly round the sides and thickly on the top with an icing made of the whites of two egg® and enough icing sugar to mix. When the icing has set, pack the cake in the tin in which it was baked, nut the lid of vow tea tin ou, and seal with wax or solder, and your cake is ready for posting to your soldier.
