CHEESE MANUFACTURE 1N- '.... CREASED IN THE SOUTH.

BT TELEGRAPH—PRESS ASSOCIATION. DUNEDIN, May 23. The Imperial demand for cheese for the British Army has eifected a remarkable change in the dairying industry of Otago and Southland. In common with other pastoral districts throughout the Dominion, there has been a notable increase in the manufacture of cheese, and it is stated that one company is establishing thirtythree cheese factories in the southern district in order to cope with the abnoi*.mal demand. Creameries are being converted' into cheese factories, as it is much more profitable to manufacture cheese for export. A representative of- • the industry explained that, while it takes two gallons and a half of milk, approximately, to produce a pound of butter, which realises 14d m the wholesale market, it required only one salJon to yield a pound of cheese worth 9d. Therefore it required no laborious calculation to show why it is more profitable nowadays to manufacture cheese in preference to butter. He is of the odjtiion that the tendency in future will be materially to decrease the output of butter for export, as the exoerience of Canadian dairymen in normal times has been demonstrative of greater, profit from the manufacture of cheese. It is thought that before spring in New Zealand the price of butter will be again increased. .
