PLUM SWEET
Stew the contents of a small bottle of Victoria plums with sugar, then pass through a sieve. There should be a pint of puree and to make up the amount it may be necessary to add water. Mix 2oa of rice flour with a small teacupful of water, stir into the puree and put on to boil, stirring until thick. Remove from the fire., fold in the white of an egg stiff* ly beaten. Put into a wetted shape and turn out when cold. Serve with whipped cream or \justard sauce. The sweet "may be made with raw plums cooked for the purpose. , ICING Required: Half a pound icing sugar, one dessertspoon butter, a little milk, and a few drops of vanilla. Beat butter and icing sugar together, add milk and vanilla and work to a smooth paste.
