PASTRY-MAKING
NECESSITY FOR COOLNESS. It is not the easiest thing among household accomplishments to be able to make good pastry, but the cook is well on the way to success if she remembers that pastry must be made under the coolest conditions obtainable. Her work table should be placed as tar from the stove as she can get it, and should have a marble top for preference. Her hands must bo cool, and she will find that frequent visits to the tap, where she can let the cold water run over her wrists, will be well repaid. All tho ingredients used should be cooled as well. Oily butter cUn never make nice pastry. Remember, a very cool workroom and a very hot oven and your pastry cannot go far wrong And if tho only bar then to successful pastry-making is the rather costly marble table, here is a suggestion: Buy a plain old marble washstand and remove the back. Then lacquer the woodwork to match the other furniture in your kitchen. Now you not only have an excellent pastry table, but a handy cabinet as well for those untidy cake tins.
