Manufacture of Cheese TARANAKI FACTORY TRIAL In several articles which have appeared in these columns recently it has been contended that the system of paying for milk for cheese-mak-ing on a butter-fat basis was inequitable, because the lower-testing milks gave a higher return per pound of butterfat when made into cheese The following report, issued by the Cardiff Co-operative Dairy Co., Taranaki, on experiments carried out with different fat-testing milks for cheese-mak-ing, provides conclusive evidence on this point.

The December returns show that the milk testing 3.4 p.c. fat gave a 17 p.c. greater yield of cheese per pound of butter-fat than did the milk testing 4.8 p.c. A'et on the present system i.e., solely on a butter-fat basis, both these milks are paid for at the same rate per pound of fat
