SALAD DAYS
Salads of all sorts, whether of the fruit or green varieties, are one of the joys of summer. The following is a tasty, -dainty dish to serve with cold meat.
Drain the liquid off a tin of asparagus tips, add to it enough water to make three cupsful, and put in a teaspoon of salt, a few pieces of parsley and pepper to taste. Bring to boil and stir in three dessertspoons ful of gelatine until dissolved. Line a mould with the asparagus tips; cut up finely a little celery and asparagus, mix with liquid, and pour into mould. When set, serve on lettuce leaves or with lettuce and dressing. Now that asparagus is plentiful in Hawke’s Ray, the fresh asparagus can be substituted for the tinned goods.
