EGG CUTLETS. 3 eggs (hard-boiled). loz butter. loz Hour. i pint milk. 1 small teaspoon curry powder. A little lemon juice. Salt and pepper. Melt the butter in a saucepan, add flour and curry powder, and cook for a minute, then add the milk, stir until the mixture leaves the sides of the pan. Chop the eggs and add them to the sauce with the salt, pepper and lenion juice. When the mixture is cold shape into cutlets, then dip into beaten egg and fine breadcrumbs.’ Fry a golden brown in smoking hot pan.
