COOKERY DEMONSTRATIONS.

Mrs. Glennen, the Australian cooke'-y expert, concluded a series of interesting demonstrations in St, Andrew’s Hal!. Hastings, last evening, in the presence of a large number of ladies. Lectures and demonstrations were also given on Thursday afternoon anti evening and yesterday afternoon. The theory and practice of cooking food for children was the subject on Thursday. The discourse contained much valuable advice to mothers, whilst the demonstration was brimful of usefid hints in the preparation of foods suitable iu cases of infant troubles.

Cookery for diabetic patients was the subject of another demonstration. Airs. Glennen discussed the symptoms, causes and treatment of this ailment, and showed by the aid of a gas stove and a few ingredients how to make gluten bread, how to stew steak without flour, sweet omelet, apple cream, and tomato custard, all of which were suitable for the treatment of diabetes.

Probably the most interesting of Mrs. Glennen’s expositions was the one dealing with cold meats, in which, by the aid of a cold joint, instead of making the time-honoured stew and curry, she produced casseroles, gateaux, cutlets, bentice, and stuffed apples, which, i>esides being a change of menu, serve, to provide a very economical method of disposing of dinner remainders. The lecturer also showed how to provide a simple yet wholesome meal, consisting of white soup,‘lrish stew, French mince, potatoes, boiled cabbage, steamed pudding, :'.nd cheese savoury, and the information and suggestions made in the course of the illustration being of a very practical nature were greatly appreciated. Breakfast dishes, including the treatment of meat, vegetables, and eggs, all cooked in paper bags, were also dealt with, and the whole scries of demonstrations was of the greatest value to those interested in the culinary art.
