We devote a large portion of our main issue this morning to a reprint of several interesting papers on the subject of meat preserving. First, there is a valuable circular from Mr. Tallerman, conveying information of a valuable character ; next, a detailed description ofthe works of the Melbourne Meat Pre-

serving company ; aud, last, au account ofthe openiug iv Melbourne of sample cases upon Professor Gramgee's principle, and which, apparently, has proved a failure. It will be recollected, however, that the Crusader, immigrant ship, has uot yet arrived, and that the shipment by that vessel was the one upou which the Professor most relied.

It is to be regretted that in the great work of utilising those flocks and herds which, at present, are utterly unmarketable—and which constitute in themselves a mine of wealth only waiting to be developed, New Zealand should be so far behind. With advantages equal, if uot superior to those of any part of the globe, this colony must some day be eminently successful as a meat preserving country. At present it is scarcely eveu a competitor for the wealth which would flow in upon it wore the great problem once solved. We shall continue to keep tbis vital subject beforo our readers, feeling

cousoious that uo part of »^ew Zealaud would more largely benefit by an export of meat than would Hawke's Bay, aud ever hopeful that the enterprise which characterised its settlers in fornier days nlay yet be exhibited in an effort in this direction.
