These foods .supply heat and energy. . ... ■Persons whose work is actively muscular require a daily quantity of carbohydrate, .but there are many who are troubled Avith “starch fermentation,'” which .leads to acidity in the system, and indigestion. A reduction of starch-containing food may be necessary', as in diabetes, riieumatism, and obesity. The removal of the larger proportion of crude starch from wheat flour, in the process of bread making, counteracts the. tendency to acidity that often . arises front the imperfect assimilation of Avhite bread.
Any reduction of carbohydrate during cold weather necessitates an increase of fat in the diet, and of the protein of body'-.building foods, such as meat and eggs. 'The natural power to digest carbohydrates is limited and varies considerably. When it is necessary' to cut down the starch foods, cheese, which contains little starch, forms an excellent fat and protein provider.
