CHEESE QUALITY

A meeting of the suppliers of Hells' Dairy Company was held on Monday to consider the make of cheese for the present season. Mr. C. J. Hawken. chairman, in opening the meeting, laid stress on the fact that although quality was much to he desired, the suppliers would have probably to face a smaller payout on “full cream” against “standardised,” but he was quite satisfied that the standardising of the milk was not meeting with the approval of the consumers, and, therefore, it was up to this country, in order to retain its market for produce, to make the best quality. After fully discussing the matter the meeting unanimously decided to make full-cream elieese for the season. A few of the suppliers expressed the opinion that the Dairy Division should cut out the standardised cheese manufacture and make full-cream cheese compulsory for all companies, as tlieie seemed to he no doubt that New Zealand was trying to force on the British public something that it was not prepared to accept and pay for. It is to be hoped the companies returning to the making of full-cream cheese will reap the reward due to them for their endeavours to uphold the qualitv of the country’s produce. At the same meeting it was decided to continue having the milk graded at the Federation laboratory, as it was contended that the results of the grading during last season had been vert beneficial.
