The limit, at least in Taranaki, has already been passed. An economic waste of butter-fat is occurring whenever milk containing more than 4 per cent, of butterfat is made up into cheese. This at present occurs during approximately half the season of the majority of New Zealand cheese factories. In the interests of producers, a return to lower fat tests in milk is imperative. This can best be done, not by any attempt to part skim or otherwise modify the milk of high testing cows, but by the widespread adoption of lower testing breeds in cheese-making areas.
