Butterfat Diverted From Butter And Cheese

A marked increase in the amount of butterfat used in products other than butter and cheese is among trends noted in the twenty-fourth annual report of the New Zealand Dairy Board. The amount used in this way has increased from 2,000,0001 b. in 1933-38 to 6,000,0001 b. in 1947-48. The amount of milk and cream consumed increased in the same period from 27,000,0001 b. to 36,000,0001 b. At the same time there was a decline in butterfat production from 439,000,0001 b to 420,000,0001 b. While the use of butterfat for “other products” has been increasing, the use of skim milk for by-products had also become greater, the report stated.
