SHOW RECIPES

SCONES AND CAKES The Diamond Jubilee A. and P. Show is to be held shortly, and substantial prize-money is offered in all cooking sections. Always read the instructions when entering articles for shows and remember that the judge’s decision is final. The following recipes may be useful for persons competing in the cooking section: — Home-made Scones 2 cups flour. 2 teaspoons baking powder, teaspoon salt. 2 tablespoons butter. Milk to mix. Rub butter into flour, add baking powder and salt, and mix with milk to a light dough. Roll out, cut into shapes and bake on a hot oven slide in a quick oven, 10 minutes, 500 degrees, both switches low. , Date and Walnut Loaf Soak one heaped cup of dates in a basin with one cup of boiling water and one teaspoon soda. Leave until cold, 'then beat well, to a pulp. Beat half a cup of sugar and one egg, add one tablespoon melted butter, two heaped cups flour, one teaspoon baking powder and a little essence of vanilla. Add dates and half a cup of walnuts. Bake in a square loaf tin for about one hour, oven 425 degrees, top off', bottom low. Can also be baked in three or four baking-powder tins, each three-quar-ters full. Shortbread Alb. butter. 2oz. icing sugar. Sib. flour. , Pinch salt. Cream butter and sugar well, add flour and knead on a floured board. Roll out and bake in a moderate oven, 25 minutes, over 375 degrees, both switches off. Pikelets 1 breakfastcup flour. 1 teaspoon baking powder. 1 dessertspoon sugar. 1 egg. ;} breakfastcup milk. 1 tablespoon melted butter. Mix the flour, sugar and baking powder together, then beat egg well and add milk. Make a well in the centre of the dry ingredients and mix to a smooth paste with egg and milk. Add melted butter. Cook in small lots on a hot greased girdle. Madeira Cake Coz. butter. Goz. sugar. Coz. flour. * 3 eggs. 1 small teaspoon baking powder. Cream butter and sugar, beat eggs and add alternately with flour to butter and sugar. Bake in a moderate oven, 400 degrees, top off, bottom low, for one hour.

Ginger Bread 2 breakfastcups flour. 1 teacup sugar. Alb. butter. 1 teaspoon baking soda. 1 teaspoon baking powder. I teacup golden syrup. 1 teacup milk. *2 eggs. 1 dessertspoon ground ginger. A teaspoon spice. A teaspoon cinnamon. Mix the dry ingredients, add eggs, well-beaten, syrup and milk. Lastly add melted butter. Bake for threequarters of an hour in a moderate oven, 400 degrees, top off, bottom low. Seed Cake £lb. butter. ilb. sugar. (i eggs. lib. flour. 1 teaspoon baking powder. 1 teaspoon Caraway seeds. Beat the butter and sugar to a cream, then add eggs, beating in one at a time. Lastly arid flour and baking powder, then seeds. Bake in a moderate oven for 1A hours, 400 degrees, top off, bottom low. Sponge Sandwich (without butter.) 4 eggs. 4 .tablespoons sugar (raised). 4 tablespoons flour (heaped). 1 level teaspoon baking powder. Beat the eggs and sugar stiff, add flour, and baking powder, and fold in lightly. Put in two greased sandwich tins and cook in a moderate oven, 400 degrees, top off, bottom low. for 15 to 20 minutes. Sponge Sandwich • (with butter.) 3 eggs. Ooz. sugar. 4oz. flour. 2oz. butter. 2 tablespoons boiling water 1 teaspoon baking powder. Beat eggs and sugar, add boiling water, flour and baking powder and lastly melted butter. Bake in two sandwich tins in a moderate oven for 20 minutes, 400 degrees, top off, bottom lowSwiss Roll 3 eggs. £ 3 breakfastcup .sugar. 1 level breakfastcup flour. 1 teaspoon baking powder, 2 tablespoons water. Beat eggs and sugar well, add water and beat again, then l'oid in flour and baking powder. Pour in a tin lined with paper and bake in a moderate oven for 10 minutes, 400 degrees, top off, bottom low. Turn out on cloth, wipe the paper over with water and it will lift off easily. Roll in cloth, leave for a few minutes, then unroll and roll up without cloth. When cool this will unroll and may be spread with jam or cream and roiled ready for use. Do not overcook. Next week there will be more recipes required for Show purposes.
