FROM COW TO KITCHEN.
Mr. C. B. Lane, U.S.A Department of Agriculture, recently deliver ed an address to the Pennsylvani? Dairy Union on the subject of marketing milk. i It I were to pass judgment on the producer and consumer I am inclined to think i would give the producer the credit tor having advanced farthest in doing his part in the fight for pure milk. The consumer needs to be educated to take proper care ot milk wbeD it csaches his door, Unfortunately, the law stops at the consumer's door, but it follows the producer all the way from the <sow to the kitchen. If we should examine the conditions we should find in many house conditions ten times worse than the dairyman's milk house.
The consumer shounld pay the dairyman a living price when the product is delivered to' him in good condition, and not be looking for the cheapest milk be can buy. The average consumer is surprisingly ignorant concerning his milk supply. He not only does not realise the importance of having pure milk, but is ignorant concerning its * greatei cost. The consumer has often beeii hojid up in a favourable light bj those who have agitated the cause of better milk,, but as a matter ot fact the milk vendor who rubs up against him knows that he is usually concerned only with the lowest price at which he can buy milk that is sweet and has lots of cream. II we investigate the milk business in any lar,ge city we shall find that the dirty, careless, price-cutting distributer is still patronised and still holds on to his business.
