INCREASING EFFICIENCY
IMPROVEMENTS TO GEORGE STREET BUTCHERY An alteration of considerable magnitude has now been completed by Messrs W. Duke and Sons Ltd., George street. Realising that modern conditions demand the most scrupulous care in the preparation of butchers’ smallgoods, the firm decided to alter a portion of their buildings and shift their manufacturing plant to a new position on the ground floor, to enable even better conditions to be obtained than prevailed in the promises. The essential features of a modern factory were all carefully considered, and all walls present a white finish, with an abundance of light and ventilation throughout. The whole effect is extremely pleasing. The factory is divided into two sections, one portion being the machine and preparation room, the other ’the cooking department. Great care is exercised in preparing all goods under the best possible hygienic conditions, and the method of cooking retains the finest qualities of the food, which is particularly the case in preparing delicacies where the cooking heat is automatically regulated to approach home conditions as nearly as possible.
The old factory has been converted into a modern bacon curing department, and both these departments are open to inspection by the public at any time, as the firm has always maintained that factories where smallgoods are prepared should be open to their customers at all times.
The alterations have given employment to a large number of men for many weeks, both in the preparation of the building and in the shifting and resetting of the machinery, which has been carried out entirely at the firm’s own expense, the plant, machinery, and general supervision being entrusted to Messrs J. Hall and Sons, together with Messrs G. Lawrence and Sons Ltd., Messrs Ashton and Sons, and Messrs John M'Grogor and Co. Ltd.
