TO MAKE COFFEE IN LARGE QUANTITIES
Some time ago a correspondent sent in the following directions for making coffee in kerosene tins;—“Allow from Jib to Jib of coffee to half a tin of boiling water, and half of milk, or, if you cannot get half milk, make the tin up with more , boiling water. We get the name of making good coffee at our dances, and find the above quantities quite strong enough. As the water boils we add the coffee loose. The grounds sink to the bottom after _ a little boiling. We then add the milk and just heat it enough, but do not let it boil after the milk is added, as it is apt to curdle. A pinch of salt should bo added to the coffee as it brings out the flavour.”
