APPETISING DISHES
Savory Bice.—Boil in the usual way $ pint of rice, and when the water has evaporated, stir in loz butter, 2 tablespoonfuls tomato catsup, and a good seasoning of salt and pepper. Add 2oz of finely grated cheese, and stir till quite hot. Turn on to a dish, sprinkle with loz grated cheese and brown lightly under a grill. Sausages in Batter. —Fry sausages on a fairly quick fire so that they are well browned on the outside before they are cooked inside, and then lay them in a very hot baking dish containing about 2 teaspoonfuls hot fat. Then pour round (not over) a batter made as follows: —Mix 2 eggs with 3 tablespoonfuls flour, pepper, and salt _to season. Add by degrees one pint milk, and beat up well. Code altogether in a fairly quick oven for about Ifimin.
Rhubarb and Raisin_ Pie.—Line an enamel plate with thin paste about one-eighth of an inch thick. Wash, peel, and cut into Jin pieces, enough rhubarb for two cups, and put on the paste. Sprinkle with one cupful sugar and half cupful halved and seeded raisins. Cover with a top layer of crust slightly thicker than the bottom one, and bake in a moderate oven for 4omftv.
