'Hie Paris Corporation has appointed professional water-tasters owing to complaints that the city’s water occasionally contains strong, unpleasant traces of phenol. Water is withdrawn every hour for the tasters, who are working day and night in eight-hour shifts. They sip the water when it is slightly tepid, thus bringing out the taste. The water is tasted before and after each filtration. Difficulty was experienced in finding tasters, who have to be non-smokers and abstainers from alcohol, tea, and coffee.
