SOUTH ISLAND DAIRY ASSOCIATION.

Members of the South Island Dairy Association met again this morning, Mr John Gray (president) being in the chair. Mr D Cuddie, head of the dairy division, and Mr C. J. Reakes, Chief Veterinarian, delivered addresses. Mr Cuddie said that great developments had taken plan in the dairy industry, but the experimental dairv «-ohool 'was still in the womb of the future. The reputation of New Zealand dairy' produce was maintained bysending Homo a larger proportion of prime quality butter ar.cl cheese than other exporting countries. Mr Cuddie strongly condemned home separation, and hoped that the method would never gain a footing in the South, where good roads prevailed. As for | the complaints about the openness of cheese, j this might be remedied to a large extent by ; suppliers paying more attention to the matter iof cooling their milk. He thought that direc- | tors of factories should set the • example of i cooling all their milk, and then all suppliers j would in the course of time follow suit. With regard to the question of i moisture content in cheese, when this fell 1 below 32 pet cent, the chccsc was found to be j too dry, while, on the other hand, when | it was over 34 per cent, the quality was j affected.
