HINTS FOR PUFF PASTRY
SECRET OF LIGHTNESS,
Keep the paste cool—let it stand— bake in a hot oven. Pastry must always be handled lightly, and it is an improvement to let it stand for awhile before putting it in the oven. Many of our finest cooks get their best results with Fether Flake Puff Pastry, which is sold ready mixed. Fether Flake is stored in refrigeration. You buy it by weight. Take it home, roll it out, and use as required. Leave for a while, then bake quickly in a hot oven, using the top shelf. Fether Flake is made fresh daily by Adams Bruce only and kept under ideal conditions in their kitchens and shops. In Wellington it is sold only in the Adams Bruce shops at Cuba Street, Manners Street (next the Plaza), 12 Willis Street (near the Grand Hotel), Riddiford Street, Newtown, and also at Lower Hutt and Petone.— P.B.A.
