CHOCOLATE CAKE
FOR THE NEAR-CHRISTMAS
BIRTHDAY
There's still time to make this cake for the unhappy child whose birthday falls too near Christmas. Chocolate icing makes it a great favourite.
Take 12oz flour, Boz grated chocolate, 9oz sugar, 9oz butter, 3 teaspoonfuls baking powder, 5-6 eggs, a few drops vanilla.
Cream the butter and sugar, add eggs and flour gradually, mix well, add the chocolate, then the baking powder and vanilla essence. Pour into a greased and papered tin and bake in a moderate oven for an hour. Turn out and ice when cold.
For the chocolate icing take 3oz grated chocolate, § teacupful water, 12oz icing sugar.
Melt the chocolate in the water, but do not allow it to boil. Add the sieved icing sugar, and, when dissolved, remove from the fire and beat well. Add a pat of butter to give the icing a gloss.
Place the cake on a wire tray with a plate underneath. Pour the icing evenly over the cake, then cool. Write a message with icing and put little candles round to suit the child's age.
