A SEASONAL RECIPE
MUSHROOM AND ONION SOUP
Take 2 large onions, |lb mushrooms, \\ pints good brown stock, 1 tablespoon flour, salt, and pepper, parsley, 1 tablespoon dripping. Peel and slice the onions and fry till nicely browned; add prepared mushrooms, and cook 5 minutes. Thicken with flour, and add stock, salt, and pepper. Simmer gently for I hour. Strain through a colander and return to reheat. Serve with croutons of fried bread and chopped parsley.
