Onion Soup. Maryland Rabbit with Apple Rings. iPiimpkin and Potatoes Baked. Stewed Jam Roll.

Maryland Rabbit with Apple Rings (first cousin to Maryland chicken).—l rabbit, li-cup breadcrumbs , 1 tablespoon parsley (chopped), 1 egg beaten, 1 tablespoon milk, 1 large cooking apple, salt and pepper, potato cubes. Join the rabbit and soak two hours in cold water. Strain this water off add 1J cups fresh water and simmer the

j Have the steak cut thinly. Divide into 4 or 6 parts and smear with a little vinegar. * Place on a floured board while preparing the filling. Mix together the breadcrumbs, finelychopped kidneys, onion chopped, and herbs. Season and bind together with a little milk. Place a portion on each piece of steak, roll up firmly, and skewer or tie up. Place in a casserole with the dripping and water. Sprinkle with salt and pepper and cook gently for %' hour. When steaks have been cooking for about 20 minutes, spread green peas over top and continue to cook in moderate oven. Minted Carrots (a nice variation of "just" plain carrots). —6 large carrots, 2 tablespoons butter, 1 tablespoon fined chopped raisins, £ teaspoon lemon juice, 2 tablespoons chopped mint, salt and pepper. Boil carrots with skins on, then drain, peel off skins and cut them into very thin slices. . Melt butter in a saucepan, add the chopped raisins, lemon juice, salt and pepper, and the carrots. Allow these to cook gently until well heated, then add the chopped mint and serve at once.
