MILK DEPARTMENT
(To the Editor.) Siv,—The chairman of the Milk Department is reported to ,have stated that an occasion has arisen for very candid speaking regarding the cviticisni' of that department. The chairman himself is largely responsible for any ignorance that might have arisen. One reads a full report of the Library Committee given in your paper, but a full report of the Milk Department is absent. Apart from the merits or otherwise of pasteurising, I am certain the following information would be of interest to your readers: (1) The price paid per 1b of butter fat or gallon to the farmers. One paper reports "Is 4d per lb of butter fat, plus 85 per cent., plus 2 1Ad per gallon." Another report "The minimum price agreed upon was Is 4d." (2) Are all cows, besides being veterinary inspected, tested at regular intervals for tubercular disease? (3) Is the milk clarified, as straining and pasteurising alone will not remove fine sand, dirt, etc? (4) The difference in retail price between 6%d per quart in Wellington, and 4d per quart for bottled milk in Palrnerston North and Christchurch ? While recognising the chairman of the Milk Department, has given a large amount of his time to endeavour to place pure milk in Wellington, I ' feel certain further information would help to remove any misunderstanding and be appreciated by your readers.-—I am, INTERESTED.
