Toffe«.— •&.-• pound of granulated sugar, half a pbund of raisins or currants, one ounce of fresh butter, and lemou essence.
Method.—Put,the sugar in the saucepan with-just enough water to melt it, and stir 'over the fire. When the sugar is melted, empty the raißius into the mixture, put on the lid of the pan, and steam for a few minutes, taking care at the samo time it does not burn. Then gradually sdd the butter and after three minutes take it of)' the fire and stir with a stick until it turns thick. If you liko you can add lemon or vanilla flavouring. Pour the mixture into a greased tin and leave until cool, but before it gets too hard cut it into ■liees. "BED COBAL." Loww Hntt.
