TO CANDY PEEL
Very few people candy their own orange and lemon peel, and yet it is not at all a difficult task (says an exchange). AH that is required is' to soak the skins of tho oranges or lemons in slightly salted water, for three or four days. They must then be drained aiid boiled" in clean water, until soft. ; Test with a firm straw, anil drain them well. Make a syrup by boiling two cupfuls of sugar, with one cupful of water for five minutes. Put the peel into a basin, 'and pour, the syrup over it. Let this stand for five days. Then strain, off the syrup and boil it .up.■■' Put the peel in the boiling syrup, and boil it until it looks clear/ Then spread the peel on a shallow dish. " Put a little of. the syrup into each hollow, sprinkle fine'sugar over it,- and leave it to dry in the sun on a cool cyeu shelf or in a warm, dry place.
