UP-TO-DATE KITCHEN METHODS.
Revolution in the kitchens of,- large Atlantic liners in the near future is foreshadowed by, the /installation on the White Star liner Pitisburg (16,500 tons) of a giant electric apparatus capable of cooking meals for the email community in an exceedingly short time.. Utility and economy are the two main v features claimed for this' innovation in sea cookery, it being held possible by a 6eries of electric switches td follow up the roasting of a side of beef, by the grilling of a 'small chop,' and yet not lose a degree of heat. There is a giant generating' station of over lQOOvh'.p., and .the Pittsburs; well deserves the title "of "the electric ship," \Vhich was bestowed upon her on her arrival at Liverpool from her builders' yard in Belfast. " The electric fitting apparatus is so scientifically arranged that by the mere switch of an electric button heat sufficient to roast two sides of beef and bake 150 loave» can be regulated in a moment. . Other apparatus include'? a dough mixer, a toaster, potato peeLer, bacon islicer, ioe roekor, and.even a knife cleaner. The terrific heat generated.is so confined that tho temperature of the kitchen is not greater than that acquired in the kitchen on baking day ofa.moderateaized family. " ? The. installation is to be the largest afloat, and experiments will be made_ during the trip to America, to ascertain'its full value from. an economic point of view. '.'• . , ■
