WHITEHEAD AND ELLIS. Palmerston North.

The above firm conduct one of the most extensive bakery and refreshment room businesses on the Coast. No less than three shops are owned by Messrs. Whitehead and Ellis in Pabnerston North, and, needless to say, at each of them a.very large trade is done. Mr. Ellis is an artist in all matters -connected with the baking trade, and the operative department is under, his special guidance, and in this branch he is I ably assisted ,by a, big"staff of experi- | enced pastrycooks. .. . Mr. Whitehead devotes his attention to the retail departments and/specialises in the manufacture of wedding cakes, J which are made to order at almost any price and railed to any address at home or abroad. The firm's output of plain and fancy bread is something enormous, and the big sales for it is; an indication of its high-class quality. The main shop is in Main-street, near the railway ' station. There is also a branch in the Square, almost on the opposite corner to the post office, and in Rangitikei-street there is another popular branch of the firm's business:. Messrs.
