N.Z. FROZEN MUTTON AT HOME.

Sir— Having had some 10 years' experience in the London meat market, I oan fully ondorse most of what Mr. Dutbie has said concerning N Z. frozen mutton and the iremarks you make in your leader on the subject. In Dnnedin I Beveral time? attempted, throngh the Otago Times and Star oolumns, to combat the idea of English butchers passing off N Z. mutton for English, but I am afraid with little success The " yarns "so frequently repeated by " Our Own Correspondent in the London Lettors were of course preferred, as being more flattering to New Zealand, fetill, sir, there is little donbt that there is great mismanagement on the other side, and what is wanted is a direot representative and salesman in the London market. Aa it is, if a few inferior carcases are included in a shipment the whole lot is olaßsified at its lowest, and dealt with accordingly, ao that the many Buffer for the few. It ia of ooarao impossible to keep up such a huge output as oura to the highest standard, but I am sure that the very large bulk of our mutton and lamb is of first-rate quality, and lately the shippers have exercised a great deal more care in aeleoting sizable caroases, which is a very important point in the London market. I thick it will prove to be a good thingr for the frozen meat industry that Mr. Suthie and his friends have thus plainly Bpoken the truth insaoh a nay that it cannot be shirked, and that yon, sir, have written so powerfully upon the report.
