THE PRICE OF BREAD. TO THE EDITOR.

Sir — Will yon allow me to reply to " J.L." and others through your columns, and I am done. " J.L." seems to be a man of figures. If not a baker, he is a baker's man, and knows as well as the best baker in town how many 21b loaves are got out of a ton of flour, but I will dare to inform him and the public as to the number of loaves a baker expeots and gets out of the ton. Ho gets 1400 21b loaves and this at 3d gives .617 10s. But 3d is not the price charged Let tho housewife look at her bill on Monday morning and she will find, anyhow. 75 out of every 100 is charged 3Jdi which brings np the return to £20 8s 4d; less cost to the bakor, £7 10s ; profit, 18s 4d on one ton. . And, with one or two exceptions, every baker in town is doing '£ or 2J tons per week, and employs one man in the bakehouso at .£2 or £2 ss, and the carter gets 20a to 30s per week. Who would not be a baker ! Let "Co-operation" and those interested in their bread bills push along, and start at oi.co. Now is tho time, when flour is cheap. A good start is half the battle. Lay in a i-tock ; you will, by bnying 50 or 100 tons, * a _Y°, sa or 10a per ton, and get 2\ dis. at that. With a practical man to manage, a cooperative bakeiy would be a good thing all round. As for "Observer," he is one of those who suffered, no doubt, by the Union, who demanded their pound of flesh, come from where it may. By the way, I see ono of their number applied to the Benevolent Sooiety for bread for himself and his starving children.
