I have examined the Samplk of M'Ewin's Rottled Ale submitted to me, and find that it contains — Alcohol by weight, 5*40 per cent; or by volume, 655 per cent. Extractive maHer, B'o6 per cent.; Acid matter, 0 17 per cent. I have also examined the Ale for such deleterious ingredients as are sometimes added to Beei, and have found no indication of Lheir presence. The three first conditions kid down by the Committee for Wines and Beers for the late International Exhibition, as those to which especial prominence would be pivbn, wen*— Ist, Low alcoholic per centage : 2nd, Freedom from acidity ; 3rd Ahsence of fusel oil; and all these jre fulfilled in this sample.
