Two Party Recipes
Orange Sherbet Cups.
•TAKE Jib. sugar, 3 gills'of water, 1 X pint orange pulp and juice, 2 tablespoons lemon juice and 1 gill cream. Boil the sugar and water for 10 minutes, skim and cool. Cuf oranges in halves crossways, remove pulp and juice, discard pith and pips. Measure required quantity, add lemon juice, mix with syrup. Freeze to a mush, whip cream stiffly and fold in. Freeze five minutes longer and serve in the orange cups. Fruit Baskets. Bake short paste until crisp in small oval or round moulds. Leave until cold and arrange in them thinlysliced banana, pear or tinned peach: or apricot. Cover with apricot glace made with equal quantities of apricot jam, sugar and water flavoured to taste with essence of lemon and boiled until thick enough to coat the back of a spoon rather well, then strained. Decorate with blanched and chopped pistachio nut and tuck in gay little handles of angelica.
