Cheese Flipjacks These biscuits are delicious served with butter, and they may be used as a base for many supper savouries: 12oz. flour, salt, cayenne, and a little mustard, 1 tablespoon butter, few drops of lemon juice, 2 tablespoons (or more, to taste) finely grated cheese. Mix all dry Ingredients, rub fii butter, and work to a dry paste with water and lemon, juice, using as little as possible. Roll out very thinly—the thinner the better—and cut into small oblong biscuits. Prick well. Bake in a moderate oven till golden brown.
