The products of combustion from a gas cooker are : —Water vapour, nitrogen, oxygen, carbon dioxide. The first of these, water vapour, is essential to life. It is hardly fair to call it a fume. The second, nitrogen, is a very inert gas; it forms 79 per cent, of the air we breathe; by no stretch of the imagination could it be termed a fume. The third, oxygen, is essential to life. It is sometimes given to athletes to enable them to perform with exceptional vigour. No one would call oxygen a fume. Carbon dioxide is present in the air we breathe. Many drinks contain considerable quantities of carbon dioxide. Beer often holds in solution three to three and a-half times its volume of carbon dioxide, so that with a pint of beer one might drink more than three pints of this gas. Some lemonades and soda waters contain ten times their volume of carbon dioxide. Recently, Professor F. A. Eastaugh, Professor of Technology at Sydney University, took several samples from two gas ovens while the gas was burning. He made four separate analyses of the ‘‘products of combustion.” Neglecting the moisture, he found the volume of carbon dioxide ranging from 3.3 per cent, to 4.5 per cent. Oxygen ranged from 13.4 to 15.4, the balance of the gas being nitrogen. The four constituents of the products of combustion aYe harmless. They are, in fact, essential to plant and animal life. As the term “fumes” is usually associated with something injurious or offensive, it ■ should not be used in reference to cooking. X 1
