To-day’s Recipe CRAYFISH SALAD
Crayfish are really nicest served as salad, for then their flavour is not lost. Make a fresh green salad, dress lightly with a good salad cream and mix in the meat from the crayfish cut up fairly smalh Put the salad in a large bowl, arrange in layers round the salad slices of cucumber, the pieces cf crayfish from ike claws—cut up—:he chopped whites of two hard-boiled egjjs, rhe sieved ydiks, some sliced beetroot and the crayfish coral. The result is a very attractive oish.
