COOKERY COUPLET
Salmon Croquettes One cupful of tinned salmon. Or any other fish, With two cups mashed potaloes Will make a novel dish. A gen’rous knob of butler, Pepper and salt to taste. A pinch of curry, a little egg. Now mix all to a paste. Take up the mash by spoonfuls, And roll into a pat, Dip each one into egg and crumbs, Then fry in boiling fat. Strain well on kitchen paper, They never must taste oily, Garnish with lemon and parscly, too And serve HOT on a d’oylcy.
