A substitute for horse-radish can be made by grating a white turnip finely, and mixing ivith it a little mustard and vinegar. This is a usqful relish for use with cold meat. If you suspect a boiling-fowl of toughness, soak it in cold water overnight, and it will be found to be quite tender when cooked.
Spinach will retain its flavour and nutriment if cooked without water. Place it in a saucepan, after being washed and drained, over a. slow fire, and stir it frequently. Sufficient juice will floto from the vegetable to cook H properly. Season it with salt and pep* per before serving. Nuts which have become dry and shrivelled should, be placed, unshcllcd, in a bowl of cold water and allowed to remain for a week, changing the water every day. When shelled they will be as plump as fresh nuts.
