HOME-MADE SWEETS FOR CHRISTMAS

Home-made sweets are such fun, and they make delightful Christmas gifts. ■As a.. rule the difficulty is that to make most sweets you require a thermometer and other special utensils. But the following recipes need nothing like this. Only the ordinary utensils that are in every are needed. Unboiled Fondant Peppermint Creams. One white of egg ■ . .... .7 Sieved ■icing' sugar ; Oil of Peppermint > Put the white of egg in a tiasln and beat slightly, adding the sugar gradually. Beat well with a wooden spoon, and add a few drops of oil of peppermint, or a little more of essence of peppermint, as this is not so strong as oiL Make to a consistency of a pliable dough. Knead well until smooth, and then roll out about a quarter of an inch

thick, using sifted icing sugar for dust)ting th 6 slab or board. Stamp out in rounds with a one-inch cutter. Leave them to dry on wax paper for about twelve hours. Ginger Creams Ingredients as for Peppermint Creams, substituting half a teaspoon, ful essence of ginger for the pepper* mint and sufficient coffee brown to make the sweets a fawn colour. Proceed as before, and then press a small piece of crystallised ginger on top of each sweet when finished. Rose Creams Ingredients as above, using half a teaspoonful of rose essence and a few drops of carmine to colour it a pretty pale pink. Don’t get it too dark. Press a small piece of rose leaf on top of each.
