FOR SMALL COOKS.
STUFFED DATES. Required: One pound of dates, one pound of icing sugar, white of a newlaid egg, a little granulated sugar, a few drops of vanilla, a few drops of cochineal, one spoonful of milk or cream. / How to Prepare: Split the dates lengthwise without actually halving them. Whisk the egg white to a stiff froth with a fork. Add the sugar,vanilla and cochineal gradually and beat with a wooden spoon< until very smooth. If necessary, add a very little milk or cream. 'Press some of the mixture into each of the dates, close and roll lightly in the granulated sugar (which has been previously put in a warm, dry place to set). They will be delicious.
