Chocolate Japanese Cakes. —For this cake make the mixture as in the previous recipe, but add 2oz. of grated chocolate to it when adding the almonds. Bake and finish as above, but put a chocolate biscuit with one of the plain ones with the coffee butter icing between. Coat with the icing and crumbs, but omit the chocolate glace icing.
