The new industry of slaughtering calves at the various freezing works is providing quite a lot of work for a number of hands At Mataura, since the industry started, approximately 25 hands have been engaged, and up to the present time 2500 calves have been dealt with (reports the ‘Ensign”) The average amount of veal from each carcass is approximately 181 b., which is better than the North Island figure, where there is more of the Jersey breed, and the average has been approx imately 121 b Each carcass is boned and bagged and placed in the freezing chamber Everything is saved; the hides are salted, and the vels are blown up and dried, and from the latter rennet is manufactured. The percentage of refects at Mataura so far is approximately 8 per cent The main point about the business is the feeding of the calves for at least three days from the birth The Government regula tions say that calves must not be less than three davs old, and must be properly fed the whole time from birth and well nourished.
