Sir,—l was. pleased to see tlio lettor written by "Rational Diet"—it is truiy intolerable that the hcaltli of the public, and particularly children, should bo at the mercy of a few men seeking to make money. Could anything be more brutal than to pl«co the financial intercuts of the few before the health of the public? It ifi lo be hoped that some public-mind-ed persons will take up the suggestion mads by "Rational Diet" with a view to establishing a Pood Education Society, and that tho Government adopt the suggestion. In regard to the standardisation of wliolo meal bread, it is conclusively proved that less wheat and Hour would do required, and at the some time it would be of benefit to tho public hearth. —I urn, etc., , C.M.
