DEFROSTING BEEF & MUTTON.

A NEW SYSTEM. A report by one of the staff of the NewSouth Wales Agents-General in London who attended a demonstration by tho M.acmeikan Defrosting I'rocess Co., Ltd., at Plymouth, on November S, has been received by tho New South Wales Government. Tho process is one by which frozen meat is thawed in a chambcir so constructed that tho atmospheric pressure .can bo regulated ami excess moisture extracted without bursting tho tissues of the. meat. It is claimed that frozen beef and mutton can then bo placed on the market in such a condition as to compare favourably in appearance with piitiio English meat.

This demonstration was attended by representatives of tho meat trade of Australia, Great Britain, the United States, and.South America'. 'J'he beef and mutton had been taken from s.s. Osterley, and held in a temperature of lSdeg. for about three weeks. It was then placed in tho patent chambers. Upon removal from- tho chambers the meat had a fine bloom, and was l'reo from mould, whilst thoro was an entire absence of "leakage." The kidneys and suet fat remained in the treated quarters, and when cut were fresh and free from bone taint or bono stink. Quarters of treated beef and carcasses of .mutton were cut up in the presence of tho visitors with satisfactory results, defrosting having been thoroughly carried, out. On the following morning the Agents-General representative inspected the treated meat, cut and uncut, at Hmithiield market, and found it still satisfactory ami freo from the drawbacks of frozen beef marketed iu the usual way.

It is stated, says tho "Sydney Telegraph," that the company intend to erect works at Melbourne, and later to extend operations to Sydney, and that during this year beef and mutton frozen and defrosted by tho process, will be placed on tho English market in bulk.
